Pilot Coffee Roasters
Toronto, ON, Canada
Located in the valley of San Martín Jilotepeque, just a short, bumpy drive from our partners at Catalan De Las Mercedes, you’ll find San Jerónimo. A 200 year-old, family-run plantation that grows a healthy stock of Caturra, Catuai + Pache San Ramón under the shade of banana trees. The hand-picked cherries are delivered to neighbouring Finca Catalan to be depulped, fermented, washed and dried on raised beds. From the care at the farm, to the precision at the mill, the results of this coffee are always brimming with flavour. It's remarkably clean and packed with chocolatey sweetness that best represents Guatemalan coffees. In Memory of Producer, Ruth Maria de Los Angeles Martinez It is with immense sadness that we share the news of Ruth’s passing late last year. Ruth was a Mother, Grandmother, Direct Trade partner, and Matriarch to the pioneering family that brought us Finca Catalan De Las Mercedes and San Jerónimo. Since 2013, we’ve visited Ruth, her son Nicholas and his wife Angi at their home at Finca Catalan. We’ve shared meals, talked about coffee, their rich family history, and just enjoyed each other's company. She was very proud of Nico’s contributions to the coffee community in Guatemala, and we will look back on that time with fondness and gratitude. While San Jerónimo will continue to thrive, we want to express our immeasurable admiration for Ruth, her leadership, kindness and hospitality. May she rest peacefully. This coffee features the Rainforest Alliance Certified™ seal, which helps to assure environmentally and socially responsible production and harvesting practices. The seal is awarded to farms and forestlands that meet the rigorous criteria of the Rainforest Alliance Sustainable Agriculture Standard or the Forest Stewardship Council.
