White Wine Fermentation is an extensive fermentation process developed by members of the Cofinet family in order to bring out more acidity and sweetness from naturally processed coffees. As you might imagine, the multi-step process results in a cup with a strikingly similar acidity and nose of white wine, hence the name. The sparkling champagne-like acidity, the pink berry juiciness, and the dark chocolate sweetness make the special attention this coffee received well worth the many hours of fermentation which you can read about in more detail below.
