Don Misael Alvarado is the owner of the "El Diamante" farm. His father was himself a coffee producer. He grew up in this universe and dreamed, from an early age, of buying his own farm and bringing a special coffee to the world. He emigrated to the United States where he worked very hard to save money. Then he returned to Hoja Blanca and bought "El Diamante". He has been working there for 35 years, now accompanied by his wife and their 5 sons. The "El Diamante" farm is located at an altitude of 1650m in the town of Hojablanca , Huehuetenango region. It is a region well known for its production of quality coffees for several decades. It is also the region with the highest altitude and the most favorable climate for the production of endemic varieties of arabica. On the farm, coffee trees of the Bourbon and Caturra varieties are grown in the shade of banana trees and Chalum trees. The coffee is prepared according to the traditional washed preparation. Within 12 hours of harvesting, the cherries are pulped and then left to ferment for about 30 hours.The grains are then washed to remove all of the remaining mucilage, then left to dry in the sun, on cement patios, for a fortnight.
