About This Coffee

Luis Ortega runs La Cabbana farm with his wife Martha and sons David and Ricardo. Located in the village of La Estrella, San Agustin County, Huila, the farm is located at an altitude of 1,730 meters. Founded in 1985, La Cavagna Plantation is home to 10,000 7-year-old Caturra trees, 3,000 8-year-old Geisha trees and 1,000 6-year-old Pink Bourbon trees. The coffee variety in this lot is Geisha and is a washed process. The process involves 14 hours of dry fermentation with cherries that are harvested for their ripeness, followed by de-pulping and fermenting for 24 hours. The beans are washed three times before being dried. After drying in the shade for 10 days for pre-drying, depending on the weather, it is dried in an African bed for another 10 days. Mr. Luis inherited the farm from his father Alejandro, planted Arabica and inherited the coffee plantation. After working with coffee varieties such as Caturra, he has ventured into varieties such as Geisha and Bourbon. Lewis aims to improve the quality and management of coffee every day, and to establish a one-of-a-kind farm. He is a soil conscious farmer and practices eco-friendly farming methods. Luis Alejandro finished 7th in the 2015 Cup of Excellence and since then his coffee has been recognized worldwide.
