This coffee marks our first time roasting coffee from Mexico! It comes from producer Diego Hernandez and Cafeología, out of Chiapas. Cafeología is an institution dedicated to research, education & development. While their agronomy team is out on the mountains coaching producers in their fields on cherry selection, fermentation, and cup quality, their mill serves as a community hub. Chiapas, located in southern Mexico is known for its varied terrain, with elevations reaching 1200-1800 masl. The volcanic soil and abundant rainfall allow for distinctive flavor profiles and a smooth body.
