In the small town of Planadas, Tolima, sits Finca El Jardin. At 1,857 metre above the sea, vast mountain views dominate the horizon. Jorge Rojas has been making a name for himself in Colombia, and with coffees like this it's easy to understand why. He's been working in coffee production since he was 13 years old, and since taking over his fathers farm, Jorge has been working with his family to find new ways to innovate and produce excellent coffees. This Honey Anaerobic coffee he produced is a fantastic example of his own style of fermentation. The coffee cherries are meticulously inspected by hand before undergoing a two stage fermentation, once as whole cherries, and once after the cherry has been pulped. For this Honey processed coffee, the mucilage left on the bean after pulping is not removed before the second fermentation, bringing more of the coffee cherry and fermentation flavours to your cup. This offering of Caturra, Bourbon, and Typica, has notes of melon, pineapple, and slightly sour lemon. We hope you enjoy drinking it as much as we enjoyed producing it!
