We truly look forward this heritage could pass down generations. Roaster’s Note: Typica is a type of species that had spread from Ethiopia to Yemen, it flourishes in highlands, very firm and solid. Typica has perfect ratio of sweetness and acidity. On the other hand, it can easily get damaged by disease and insects, which is reason why Typica has been so rare in the market for quite a while (so glad to see it!). Since typica has “big, nice body”, it needs some patience during roasting, the heat must be consistent till the very end to boost its flavor. For the taste wise, its delightful acidity is just quite right as any stone fruit; its soothing woody taste reminds of caramel that covered in hazelnut; and it has very refreshing “foresty” taste, just like a fresh and firm tomato, which is very interesting! In order to fully enjoy its good “foresty” flavour, we recommend increase the dose and shorten the brewing time while brewing, or it would possibly taste dry and monotonous.
