Yemen Hayma Kharijiya Aljidan XI is the epitome of what we search for in our Exceedingly Rare coffees. We scour the world to find a lot as unique as this—from rare cultivars, to an avant-garde processing method, to a taste that speaks to the singularity of its journey. Faris Sheibani, the founder of Qima coffee, spent years researching the coffee plants in Yemen, eventually discovering they had evolved into a previously unknown genetic mother population—Yemenia. This scientific discovery opens the world of coffee to an entirely new “ocean of varieties” in Sheibani’s words, some of which are found in this coffee. These cultivars make this lot a unique find in and of its own, but Qima then processes the coffee in an entirely new way they call “Alchemy.” A combination of pressure, temperature control, gas regulation, and meticulously managed slow-drying embolden the intrinsic flavor while showcasing its unique genetic background. Living up to the prestige of the region, this coffee’s flavor is bewildering in its ability to balance such vastly different elements. A forward aroma of baking spices, the drunken notes of black cherry, a sweet and funky finish of tamarind—this motley spattering of characteristics will shock you with its perfection.
