We roast our coffee using an Aillio Bullet which is a small scale coffee roaster. Also, every order is roasted-to-order rather than sitting around in inventory, so the coffee you order is as fresh as possible. Roasting on such a small scale and to-order allows us to adjust the roast of any individual bean to your preference which is something that very few, if any, other roasters are able to offer. We do have a recommended roast level for every bean, but you aren’t limited to what we consider the “best” option. Most days, I am able to roast and ship orders placed before 12pm EST on the same day. At the longest (under normal circumstances), orders would be roasted and shipped the day after they are placed. Currently, we use USPS for our shipping, so orders placed after about 10AM on Saturday will not be able to be shipped until the following Monday. For the same reasons, orders placed Monday-Wednesday will usually arrive by that Saturday, while orders placed on Thursday-Friday may not arrive until the following week.
