Presenting El Encanto from Antioquia, we're ending the Colombia regional tour on a brilliant note! Highly complex, El Encanto not only stands out for its classic Antioquia flavour profile but also serves as an example of producer Juan Saldarriaga's innovative approach to processing. Taking over his family business in 2012, Juan started by introducing new cultivars at different altitudes. From unusual Castillos, Caturras and Tabis to Bourbon, Geisha and SL28s, Juan's plan was to increase overall production by identifying and cultivating thriving varieties. But what really sets Juan apart is the different types of drying facilities he has engineered. From a purposefully designed mechanical cold dryer - borrowed and modified from the wine industry - to drying beds in the shade, the effect improved drying has had on his coffee is remarkable. Offering a juicy, rich sweetness with a soft tropical twist in the finish, El Encanto is a must!
