Know Your Coffee: SIDRA - Black Honey Process The story of this varietal of coffee is a bit of a mystery. Some believe the parent varieties are Typica crossed with Bourbon - two other high quality coffees. Although, genetic testing revealed several different outcomes including some that trace back to Ethiopian Heirloom varietys (Wild grown coffee). The World Coffee Research says it’s possible that Sidra has no clear identity which is the conversation of a much bigger opportunity in our industry. The legend of Sidra, however, is expected to have intense sweet & floral notes - many referencing lavender. In the case of the Sidra legend - We have a classic. Bursting with complex florals like lavender, sweet & indistinctive botanicals with long lingering fruit notes. Expect a structured cup. Big body that backs up all of the vibrancy. It’s a beautiful coffee that deserves a space among your ever-growing collection.
