We're soooo delighted to have this coffee from this wonderful producer back on the menu! Let's talk about it: Bourbon is a variety of coffee, like Gala is a variety of apple. Its name, like a certain spirit from Kentucky's, is derived from a French royal family. (They invented neither of these things; they were just wealthy). Pink Bourbon is a hybrid of Red & Yellow Bourbon, originating in Colombia. It's fantastic- sweet, juicy, & floral. It also seems to offer good resistance against crop diseases. But variety alone doth not render amazing coffee, buds. Amazing farmers do and this coffee is here & awesome because of farmer Jose Burbano. Jose's been around coffee his whole life but began farming his own at 18. He harvests his coffee at peak ripeness & ferments it overnight. From there, it is depulped, fermented again for 72 hours, washed 4x, & dried. Pink Bourbon promises a lot on paper but Jose's dedication to details is what renders a coffee that is both approachable & out-of-this-world-good. We're grateful!
