About This Coffee

From enterprising producers Rigoberto and Luis Herrera (the famed group Café Granja La Esperanza), this special hybrid washed yellow bourbon is from one of their umbrella farms Las Margaritas. The coffee is carefully picked and sorted for ripeness. The coffee is first fermented in cherry for 19-22 hours before depulping without water. It is then allowed a secondary fermentation in mucilage for 35 hours before fully washing the coffee and mechanically drying it to a final moisture of 10.5%.
