duck-rabbit coffee
Cleveland, OH, USA
This coffee comes from Mushaka washing station in southwestern Rwanda. The station is in Nyungwe Forest National Park. Located in western Great Rift Valley, it is a lush mountainous forest bursting with a plethora of flora and fauna to include 248 species of orchids, 13 species of primates, and over 300 species of birds. Mushaka wash station is located around 1600 meters above sea level with farms planted 1800+. The wash station serves about 100 local farmers. Most farmers are growing less than 1/2 hectare of coffee. A lot of labor goes into sorting the coffee at Mushaka. At intake, coffee is spread out onto tables and hand sorted to remove underripe and defective coffee. Next, the coffee is floated, underripe coffee floats and is sorted out before being pulped. Once on the coffee reaches the drying tables, it is sifted through several times during the couple weeks it takes to dry. The result of all this sorting is a clean, uniform, top tier cup.
