Next up in our Peru offering is El Sauce. Marshmallow-like in texture oozing syrupy cherry and cranberry goodness sprinkled with bits of honeycomb, get ready for a treat! Not to be confused with last year’s El Sauce by Teofilio Santos Bermeo, this is a community lot from the Jaen and San Ignacio regions of Cajamarca in northern Peru. To build up volumes and capture the typical flavour profile of the area, our sourcing partners Falcon purchase day lots from surrounding smallholders from in and around Cajamarca. Mostly from high altitude farms - the coffee is delivered as parchment after being processed and dried by the producers. Once at the Falcon warehouse, the team will cup, separate and blend the coffee based on cup quality and flavour profile to best represent the region and its producers. A chewy delight, we can’t wait to see what they have to show next season!
