Groundstate is a cafe roastery based in the Liberties, Dublin 8 run by two mates, Andy & Mark. As a scientist and a Yogi we wanted to build something authentic and sustainable when opening Groundstate. We hope this shines through in all aspects of our project. As a cafe based in Dublin we wanted to use quality local suppliers for our food, with an emphasis on seasonal vegetarian and vegan food alongside some quality meat options. Our suppliers include vegetables from McNallys family farm located in North Dublin, sourdough from Firehouse Bakery located Delgeny Co. Wicklow, free range eggs sourced from North Wicklow Eggs, and free range smoked bacon from Pigs on the Green based in offaly. For our coffee, we source and roast exceptional quality coffee beans working in partnership with small growers and specialty importers. We search for interesting unusual lots and roast aming to draw out the unique characteristics of the coffee's terroir. We roast our coffee in small batches using fluid bed roasting technology. Being environmentally aware is of the utmost importance to us. Here at Groundstate we have decided to offset some of our carbon footprint by teaming up with Hometree to plant native Irish trees. Hopefully we will be carbon neutral someday but until then we will keep doing our very best to keep Groundstates environmental impact to a minimum.
